Tasting Notes
In the glass, Alma Assemblage 2 Extra Brut gleams a bright straw to pale gold, with a fine and persistent perlage that forms a delicate, creamy mousse. On the nose, it opens with citrus zest and green apple, followed by white flowers, fresh brioche, and hints of toasted nuts and chalky minerality—classic Franciacorta aromatics with a Bellavista signature. The palate is taut, dry, and beautifully structured, with crisp acidity framing flavors of lemon curd, ripe pear, and stone fruits, layered over subtle pastry notes and a salty, mineral edge. The Extra Brut dosage keeps the wine focused and precise, giving it great energy and length. In magnum, the evolution is slower and more harmonious, offering excellent aging potential over 6–10 years, during which the wine will gain further complexity, creaminess, and depth while retaining its backbone of freshness.

Production
Sourced from selected vineyard sites in Franciacorta, in the rolling hills of Lombardy, Alma Assemblage 2 reflects a terroir of calcareous and morainic soils that naturally lend tension, minerality, and finesse to the grapes. The fruit is typically harvested by hand to ensure careful selection of bunches at optimal ripeness. Bellavista is known for vinifying a significant proportion of the base wines in small oak barrels, adding texture and complexity, before blending different parcels and reserve wines into the final assemblage. The second fermentation takes place in bottle following the traditional method, with an extended period of lees aging to build creaminess, fine bubbles, and layered aromas, culminating in a precise Extra Brut style with minimal dosage.

Food & Serving
This Franciacorta is a versatile food partner, ideal with refined appetizers such as oysters, crudo, carpaccio, and caviar, as well as delicate fish dishes, shellfish, sushi, and tempura. It also works beautifully with light pasta or risotto dishes, poultry, vegetable terrines, and soft-ripened cheeses. Serve well chilled at around 6–8°C (43–46°F) to highlight its tension and aromatics. Decanting is not necessary for this style; however, opening the bottle 10–15 minutes before serving and pouring into tulip-shaped sparkling wine glasses will allow the aromas and fine mousse to fully express themselves.
