Tasting Notes
In the glass, Bagnadore Riserva 2016 typically shows a luminous straw-gold color with fine, persistent bubbles forming an elegant, continuous mousse. The nose is precise and layered: expect scents of lemon zest, ripe orchard fruits, brioche and toasted hazelnut, with hints of chamomile, wet stone and a delicate mineral smokiness from extended lees aging. On the palate, this Pas Dosè is taut, dry and incisive, yet texturally creamy from its long maturation. Flavors of green apple, pear and citrus are framed by notes of toasted bread, almond and subtle spice, all carried by vibrant acidity and a chalky, saline finish. The structure is built for longevity: while already complex and harmonious, this 2016 Riserva has excellent aging potential and should continue to develop greater nutty, honeyed and tertiary nuances over the next 6–10 years when well cellared.

Production
The Bagnadore cuvée comes from select plots in Franciacorta, where Barone Pizzini farms organically in the rolling hills of Lombardy, on soils rich in morainic deposits, gravel and glacial sediments that contribute tension and minerality to the wine. Grapes—primarily Chardonnay with a significant portion of Pinot Nero—are hand-harvested at optimal ripeness to preserve acidity and freshness. After gentle pressing, the base wines are vinified parcel by parcel, often with a portion fermented in oak to add texture and complexity, before assemblage. The second fermentation takes place in bottle following the traditional method, with an extended period of lees aging (often 60 months or more) to build depth, finesse and creaminess. As a Pas Dosè, the wine is disgorged without dosage, allowing the natural balance and character of the vintage and terroir to shine through.

Food & Serving
This Franciacorta Pas Dosè is a superb partner for refined, savory dishes such as oysters, crudo, sashimi, and delicate seafood carpaccio, as well as lobster, scallops, and simply prepared white fish. It also pairs beautifully with aged cheeses, prosciutto, porcini-based risotto and light poultry dishes. Serve well chilled, ideally around 8–10°C (46–50°F), to highlight its precision and freshness. A brief 15–20 minutes in the glass or a short, careful decanting in a wide-bottomed carafe can help the wine open up aromatically, especially if served in a larger white wine or sparkling wine glass.
