Babylonstoren Candide 2022

Babylonstoren Candide 2022 is a fresh, crowd-pleasing South African white with a bright, crunchy style that makes it hard to resist pouring a second glass. Crafted from a nuanced blend led by Chardonnay and complemented by Sémillon, Chenin Blanc, Roussanne, and Viognier, it reflects both the estate’s precision and its historic Cape Winelands heritage.

Tasting Notes
Pale straw-green in the glass, it opens with inviting aromas of citrus, pineapple, dried fruit, white melon, and a subtle floral, slightly earthy edge. On the palate, it’s lively and medium-bodied, with notes of lime, peach skin, melon, pineapple, and mint, supported by a soft mineral tension and a gently leesy finish. The wine is made for early drinking rather than long cellaring, with its charm best enjoyed within 2–3 years of release. Its balance of freshness, texture, and fruit purity makes it an easy wine to appreciate now.

Production
Fruit comes from Babylonstoren’s own vineyards around Simonsberg, where the estate benefits from a mix of established vines and high-quality mountain terroir up to around 600 meters above sea level. Winemaker Klaas Stoffberg ferments and matures the wine partly in stainless steel and partly for four months in oak, preserving freshness while adding a touch of roundness and complexity.

Food & Serving
This is an excellent match for light dishes and fresh flavors, especially seafood, chicken, salads, grilled vegetables, and other lighter vegetarian fare. Serve well chilled, around 8–10°C, and decanting is not necessary.
