Description
Babylonstoren Cabernet Sauvignon 2020 is a richly layered South African Cabernet that combines depth, elegance, and impressive value. Sourced from eight parcels on the slopes of Simonsberg Mountain and crafted by winemaker Klaas Stoffberg, it reflects both the estate’s historic roots and its modern, meticulous approach to winemaking.
Tasting Notes
In the glass, it shows a deep ruby-red color that hints at its concentration. The nose opens with dark cherries, red plums, and blueberries, followed by warmer notes of sweet tobacco and cedar.
On the palate, the wine is velvety and full of layered black fruit, with a rounded, polished texture and a long, graceful finish. It is enjoyable now, but the structure and oak influence suggest it will continue to develop beautifully for up to 10 years from release.
Production
The fruit comes from eight different parcels on Simonsberg Mountain, between Stellenbosch and Paarl, with vineyards reaching up to around 600 meters above sea level. Babylonstoren works with a minimal-intervention philosophy, aiming to stay true to the terroir while using a mix of stainless steel, concrete, and French oak depending on the wine.
After fermentation, the Cabernet matures for 18 months in oak barrels, with approximately 40% new oak, before spending a further three months in bottle prior to release.
Food & Serving
This Cabernet Sauvignon is an excellent match for grilled or roasted beef, lamb, venison, and dishes with rich sauces. It also pairs well with hard cheeses and hearty mushroom-based dishes. Serve at 16-18°C, and decanting for about 1 hour is recommended if drinking now.
Producer
Babylonstoren is one of South Africa’s most admired wine estates, with a history dating back to 1692, making it one of the best-preserved Cape Dutch farms in the region. In recent years, it has become known for producing high-quality wines with a strong sense of place, under the leadership of winemaker Klaas Stoffberg and cellar master Charl Coetzee.
The estate’s modern wine program began with the 2011 vintage under the Babylonstoren label, after generations of the Louw family had farmed the land and sold fruit to larger producers. Since then, Babylonstoren has earned a growing reputation for crafting expressive, terroir-driven wines from its vineyards around Simonsberg Mountain.
