In the glass, Ausone 2018 shows a deep, opaque garnet-purple color, hinting at its concentration and youth. The nose is initially reserved and benefits from generous air, gradually unfolding into layers of ripe black cherries, wild blueberries, and plum compote. With time, more complex nuances emerge: candied violets, melted dark chocolate, licorice, crushed stone, cedar shavings, and a touch of pencil lead, all interwoven in a remarkably refined aromatic profile. On the palate, this is medium to full-bodied yet incredibly poised, with 14.5% alcohol carried effortlessly by a spine of vibrant acidity and ultra-fine, tightly knit tannins. Production
Château Ausone sits on a steep, terraced limestone and clay slope on the southern edge of Saint-Émilion, one of the most prized terroirs in all of Bordeaux. The old-vine Cabernet Franc and Merlot are planted at high density and meticulously tended, with low yields and hand-harvesting to ensure only the healthiest, perfectly ripe berries are selected. Vinification takes place in temperature-controlled vats, with careful extraction to preserve finesse, followed by ageing in a high proportion of new French oak barrels for around 18–20 months. Every step—from plot-by-plot vinification to rigorous selection for the grand vin—is designed to capture the singular, mineral-etched elegance that defines Ausone.

Food & Serving
Ausone 2018 is a superb partner to refined, richly flavored dishes such as roast lamb with rosemary, dry-aged ribeye or côte de boeuf, pigeon or squab, veal sweetbreads, or truffle-infused mushroom dishes. It also pairs beautifully with classic French cuisine, from duck breast to braised beef cheeks, and with aged hard cheeses like Comté or mature Gruyère. Serve at 16–18°C (60–64°F); in its youth, decant generously for 2–4 hours to allow the aromatics to fully unfurl. As it gains bottle age, a gentler decant of about an hour will be enough to open the wine and separate it from any sediment.
