From a tiny production of roughly 1,000 cases, this Saint‑Émilion Premier Grand Cru Classé A marries power, precision and haunting complexity in a format built for decades of graceful evolution. The 2000 vintage is widely regarded as one of the great modern years in Bordeaux, and Ausone sits at the very top of that hierarchy, making this large format bottle especially collectible and age‑worthy.
Tasting Notes
In the glass, the 2000 Ausone shows a deep, saturated purple core with only the first hints of garnet at the rim—remarkably youthful for its age, particularly in magnum. The nose is complex and expressive: truffle, crushed stone and graphite meet layers of ripe blueberry and blackberry, with undertones of licorice, violet and fine oak spice.
On the palate, this is rich, full‑bodied and incredibly concentrated without ever feeling heavy. The tannins are wonderfully sweet and polished, wrapping around dense black and blue fruits, dark plum and savory nuances of tobacco, earth and mineral. There is a striking combination of power and finesse—great depth of fruit, yet lifted by fresh acidity and a long, precise, almost weightless finish. In magnum, the aging potential is outstanding: properly stored, this bottle can easily develop for another 20–30+ years, continuing to gain tertiary notes of truffle, forest floor and cigar box while retaining its core of fruit.
Production
Château Ausone sits on steep, terraced vineyards just outside the town of Saint‑Émilion, planted on a unique mix of limestone and clay over solid rock—one of the keys to its remarkable mineral drive and longevity. The blend is typically dominated by Cabernet Franc with a significant share of Merlot, sourced from old vines that deliver naturally low yields and intense concentration. Harvesting is done manually, parcel by parcel, to ensure only perfectly ripe, healthy berries make it into the grand vin. After careful sorting, fermentation takes place in temperature‑controlled vats, followed by extended élevage in a high proportion of new French oak barrels, where the wine gains additional structure, complexity and polish before bottling. The magnum format further slows and refines the evolution of this already long‑lived wine.

This is a wine that shines with refined, richly flavored cuisine: think roast lamb with herbs, dry‑aged ribeye, pigeon or duck with truffle, venison, or classic dishes like beef Wellington and braised short ribs. It also pairs beautifully with mature hard cheeses and earthy mushroom preparations that echo its truffle and forest‑floor notes. Serve at 16–18°C (about 60–64°F) to highlight the wine’s balance and aromatic complexity. Given its density and youthfulness in magnum, decant at least 2–3 hours in advance—longer for a more open, velvety profile; shorter if you prefer to experience its structure and gradual unfolding in the glass.
