The nose is intensely expressive and layered: truffle, crushed stone and graphite are woven through sumptuous dark fruit tones of blueberries and blackberries, lifted by hints of licorice, violet and a touch of sweet spice. Ausone sits on a dramatic limestone terrace above the town of Saint‑Émilion, where old vines of predominantly Cabernet Franc with Merlot sink deep roots into a mix of limestone and clay. This privileged terroir gives the wine its signature combination of mineral tension, perfume and longevity. The fruit is harvested by hand at optimal ripeness, parcel by parcel, to preserve purity and precision. In the cellar, Ausone is traditionally vinified in temperature‑controlled vats, followed by élevage in a high proportion of new French oak barrels, where the wine ages on its fine lees. Meticulous selection at every stage and very low yields result in a wine of exceptional concentration, refinement and terroir expression.
