Tasting Notes
In the glass, this Cabernet shows a deep, concentrated color that hints at its dark-fruited character. The nose opens with blackberry and black cherry, layered with anise, cedar, mocha, and a subtle touch of tar, giving it a savory complexity that feels very much of the vineyard. On the palate, the dark fruit carries through with precision, joined by cedarwood, spice, and a finely textured, velvety tannin structure. The wine has enough freshness to keep it lifted, while the concentration and tannin suggest it will develop gracefully over the coming years.

Production
Fellom Ranch Vineyard sits on a ridge high in the Santa Cruz Mountains overlooking Silicon Valley, where the vines must work hard in a rugged, cool, and exposed environment. Originally planted in 1929 and later replanted to Cabernet Sauvignon in 1980 with material from Charles Winery in Napa Valley, the site is known for low yields and high quality fruit. For this wine, all clusters were destemmed, and the wine aged for 22 months with only 20% new French oak.

This Cabernet pairs beautifully with grilled ribeye, braised short ribs, roast lamb, or mushroom-based dishes with rich, earthy flavors. Serve it at around 16–18°C, and consider decanting for 1–2 hours to allow the aromatics and tannins to open fully.
