Tasting Notes
In the glass, this Champagne presents a pale lemon-gold color with fine, persistent bubbles forming a delicate, creamy mousse. The grapes are typically harvested by hand to ensure optimal selection, preserving acidity and aromatic purity, especially important for a vintage, single-varietal Champagne. Gentle pressing and a controlled, cool fermentation in stainless steel (with possible partial oak aging for texture, depending on parcel) help to retain freshness while adding subtle complexity. The base wines are then matured on fine lees before secondary fermentation in bottle. Extended aging on the lees in the cellar builds creaminess and autolytic character, and a low dosage at disgorgement results in the extra brut style, emphasizing precision, minerality, and the distinctive qualities of the 2019 vintage.
