Tasting Notes
In the glass, the 2019 Cornas Vieilles Vignes shows a deep, opaque ruby-purple hue, hinting at its concentration and youth. The nose is layered and harmonious, with notes of crushed black and blue berries, wild red fruits, cracked black pepper, crushed stone, and a subtle minty lift. Underneath, you’ll find hints of violets, smoked meat, and a whisper of graphite, all tying into the classic Cornas profile.
On the palate, it is medium to full-bodied, velvety, and finely structured, with a core of ripe blueberry, black cherry, and red currant framed by fresh acidity and polished tannins. The stony, mineral edge—crushed rock and iron—runs through the wine, giving it definition and energy. It’s concentrated without feeling heavy or overbearing, finishing long and precise with lingering spice and cool herbal tones. In magnum, it has excellent aging potential: it will drink beautifully over the next 10–15 years, and likely beyond, gaining complexity and nuance with time in the cellar.
Production
Cornas Vieilles Vignes is drawn from old-vine Syrah planted on the steep, terraced granitic slopes of Cornas in the northern Rhône—one of the great terroirs for this grape. The poor, decomposed granite soils and south- to southeast-facing exposures provide natural concentration, mineral tension, and ripeness, while low yields from the old vines further intensify flavor. Grapes are typically harvested by hand due to the steepness of the vineyards, with careful sorting in the vineyard and at the cellar door. Fermentation is traditionally carried out in temperature-controlled vats, often with a portion of whole clusters to add aromatic lift and structure. The wine is then aged in oak (commonly a mix of older barrels and foudres) for sufficient time to polish the tannins and integrate the components, while preserving the purity and character of Cornas’ granitic terroir.
Food & Serving
This Cornas is a superb partner for robust, savory dishes such as grilled or roasted lamb, duck breast, venison, beef short ribs, or a classic cassoulet. It also pairs beautifully with game birds, mushroom-based dishes, and aged hard cheeses like Comté or mature cheddar. Serve at 16–18°C (about 60–64°F) to highlight its aromatics and balance. In its youth, decant for 1–2 hours to let the wine open and soften; as it ages and gains tertiary complexity, a gentle 30–60 minute decant is usually sufficient to remove sediment and allow the bouquet to fully unfurl.
