Tasting Notes
In the glass, the 2016 Cornas Vieilles Vignes shows a deep, opaque ruby-purple color with a vibrant rim, hinting at its concentration and youth. The nose is expressive and layered, with notes of crushed black and white pepper, torn blackthorn and wild berries wrapped around a core of ripe red plums. With air, darker nuances emerge—licorice, smoked meat, a touch of graphite and subtle dried herbs. On the palate, it is full-bodied, dense and finely textured, with a lovely combination of richness and drive. Ripe red and black plum, black cherry and sloe fruit are framed by savory pepper, violet and a distinct licorice note that carries into the long, gently dusty finish. The tannins are firm yet polished, giving the wine an elegant, smoothed grip rather than harsh edges. Already approachable in its youth, this 2016 has the structure and balance to develop gracefully for at least 10–15 years from the vintage, gaining complexity and tertiary nuance over time.

Production
Cornas Vieilles Vignes is sourced from old Syrah vines rooted in the classic, decomposed granite soils of Cornas—steep, south- and southeast-facing terraces that naturally limit yields and concentrate flavor. The fruit is meticulously hand-harvested, parcel by parcel, to ensure only perfectly ripe, healthy bunches make it to the cellar. In keeping with the domaine’s thoughtful, terroir-driven approach, the grapes are mostly destemmed, followed by a traditional, temperature-controlled fermentation with regular punch-downs and pump-overs to extract color, aroma and fine tannin. The wine is then aged in French oak (with a modest proportion of new barrels), allowing it to integrate and evolve without masking its granite-driven minerality, before being bottled with minimal intervention to preserve purity and character.

Food & Serving
This Cornas is a natural partner for rich, savory dishes such as lamb shank, roast duck, venison, beef short ribs or slow-braised beef cheeks. It also works beautifully with hearty stews, game birds, and dishes featuring wild mushrooms, lentils or root vegetables, as well as mature hard cheeses. Serve at 16–18°C (60–64°F) for optimal expression. Decant for 1–2 hours in its youth to open up the aromatics and soften the structure; older bottles from this vintage can be gently decanted shortly before serving to remove any sediment.
