Tasting Notes
In the glass, the 2019 Vieilles Fontaines is intensely dark and opaque, with a deep purple core fading to a narrow ruby rim—classic, youthful Syrah from a warm, concentrated vintage. The nose is immediately captivating, with layers of salted licorice, crème de cassis, blackberry compote and black cherry, threaded with aromas of cracked black pepper, violets, smoked meat, graphite and subtle spicy oak. On the palate, this is full-bodied and dense, yet impressively balanced. The cassis and black fruit are ripe and sweet-toned, wrapped in a firm but polished structure of fine-grained tannins. Savory notes—olives, charcuterie, iron and dark cocoa—add complexity, while the fresh acidity and mineral backbone from Cornas’ granite soils keep the wine vibrant rather than heavy. The finish is long, saline and spicy, with lingering notes of licorice and dark berries. Built for the long haul, this 2019 has significant cellaring capacity; it will reward 5–7 years of patience and should drink beautifully for 15–20 years or more from vintage in good conditions.

Production
Vieilles Fontaines is sourced from very old Syrah vines, around 80 years of age, planted on the steep, terraced, granite slopes of Cornas in the Northern Rhône. The parcels sit near a natural spring (“fontaines”), which helps the vines remain active even in hot, dry years, contributing to impressive ripeness and concentration without sacrificing balance. Harvesting is done by hand due to the extreme slopes, with careful selection in the vineyard and at the cellar to keep only perfectly healthy, ripe fruit. Fermentation is traditionally Rhône in style, often with a proportion of whole clusters, using indigenous yeasts and extended maceration to extract depth of color, tannin and flavor. The wine is then aged for about two years in French oak barrels, of which approximately 15–20% are new, lending subtle spice and structure without dominating the terroir-driven character.

Food & Serving
This powerful Cornas is a natural partner for richly flavored dishes and robust meats: think grilled or roasted lamb, slow-braised beef short ribs, venison, wild boar, duck breast, or classic French daubes and stews. It also pairs beautifully with game birds, aged hard cheeses and earthy preparations featuring mushrooms or lentils. Serve at 16–18°C (60–64°F) to highlight its aromatic complexity and balance. In its youth, decant for 1.5–2 hours to soften the tannins and allow the wine to open up; with more bottle age, a gentle 30–45 minute decant is usually enough to remove any sediment and awaken the aromatics.
