Grapes are harvested by hand at optimal ripeness, with strict sorting to ensure only the healthiest fruit makes it into the cellar. Vinification typically involves partial whole-cluster fermentation—responsible for those subtle stemmy and herbal nuances—followed by a traditional maceration and aging in used oak to preserve freshness and the character of the terroir rather than imprinting strong oak flavors.
