Tasting Notes
In the glass, the 2021 Les Clos shows a pale straw color with green hints, reflecting its youth and freshness. The nose is pure and focused, offering layered aromas of lemon zest, green apple, white flowers, chalk, and crushed oyster shell, with subtle notes of fresh almond and a discreet touch of oak.
On the palate, it is tense and structured, with a vibrant line of citrus and green orchard fruit supported by a pronounced saline minerality. The mid-palate gains complexity with notes of wet stone, grapefruit pith, and a hint of smoke and hazelnut as it opens. The finish is long, mouthwatering, and remarkably precise, suggesting excellent aging potential. Production
Les Clos is the most illustrious of Chablis’ grand cru vineyards, a south- and southwest-facing slope with thin, stony soils rich in Kimmeridgian limestone and fossilized seashells that give the wine its hallmark minerality. Alain Geoffroy harvests by hand to ensure careful selection of healthy, perfectly ripe Chardonnay grapes. In the cellar, fermentation takes place at controlled temperatures to preserve aromatic purity, followed by maturation on fine lees to build texture and depth. A judicious use of oak—often in older barrels or partly in stainless steel—adds subtle structure without overshadowing the terroir-driven character of this grand cru.
Food & Serving
This Chablis Grand Cru Les Clos is a superb partner for refined seafood dishes such as oysters, lobster, scallops, and turbot, as well as sushi, sashimi, and delicately sauced white fish. It also pairs beautifully with fine poultry, veal in cream sauces, and aged hard cheeses like Comté. Serve at 10–12°C (50–54°F) to highlight its precision and minerality. Young bottles benefit from 30–60 minutes in a decanter to open the aromatics; with age, gentle aeration in the glass is usually sufficient.
