Tasting Notes
In the glass, this Blanc de Blancs shows a luminous, pale straw color with fine, persistent bubbles forming a delicate mousse. The nose is pure and focused, offering notes of lemon zest, green apple, pear, and white flowers, layered with chalky minerality, fresh brioche, and a subtle hint of almond. On the palate, it is taut, linear, and vibrant, reflecting the Extra Brut dosage with a dry, precise structure. The grapes are harvested by hand to ensure pristine fruit selection, with gentle pressing to extract only the finest juice. Primary fermentation takes place in temperature-controlled conditions to preserve aromatic freshness, followed by extended maturation on the lees to build texture, depth, and fine, creamy bubbles. After blending across multiple vintages to achieve balance and house style consistency, the wine undergoes secondary fermentation in bottle and ages sur lattes before being disgorged with an Extra Brut dosage, emphasizing purity and terroir expression over sweetness.

This Extra Brut Blanc de Blancs shines with refined, subtly flavored dishes that mirror its elegance and freshness.
