Agnes et Didier Dauvissat Chablis Les Brèches de Fye 2025 is a classic expression of Chardonnay from northern Burgundy, shaped by the distinctive Kimmeridgian soils of Chablis. Made by Domaine Agnes and Didier Dauvissat, the wine combines bright freshness, subtle citrus character and the fine mineral edge that has made Chablis a benchmark for unoaked white Burgundy.
Tasting Notes
The wine has a clear, pale golden appearance. Its delicate nose offers fresh citrus, restrained floral nuances and cool mineral aromas reminiscent of wet stone and the sea. On the palate, it is elegant and harmonious, with lively acidity, a clean texture and a precise, saline finish that reflects the region’s limestone-rich terroir.

Production
The Chardonnay grapes are grown on clay-limestone marl containing small layers of fossilised oyster shells, characteristic of Chablis’s Kimmeridgian geology. The vineyards are mechanically harvested, after which the wine undergoes traditional vinification in temperature-controlled stainless-steel tanks, including both alcoholic and malolactic fermentation. It is then aged on its fine lees in stainless steel for approximately 6 to 12 months, preserving its purity and mineral freshness.
Food & Serving
Serve chilled at approximately 10–12°C. Its citrus-driven freshness and mineral finish make it an excellent partner for oysters, mussels, prawns, grilled fish, sushi and seafood salads, while its balance also suits goat’s cheese and light poultry dishes. Decanting is generally unnecessary, although a short period of aeration in the glass can help reveal additional aromatic detail.
