Tasting Notes
Deep, inky purple in the glass, this wine immediately signals intensity. The nose is layered and expressive, with blueberry, blackcurrant, wild herbs, liquorice, pepper, and warm baking spices. On the palate, it’s powerful yet beautifully composed, with silky texture, long flavor persistence, and a bright line of freshness running through the dark and blue fruit. Violet, spice, pepper, and a fine mineral edge add lift and complexity. It has excellent aging potential, and should develop even more nuance and polish over the next several years.

Production
The fruit comes from more than 100-year-old vines grown organically on a highly regarded Clare Valley site between Aberfeldy and Wendouree, where the soils and exposure are especially well suited to Shiraz. Yields are kept very low, and the grapes are hand-harvested before being fully destemmed. Fermentation takes place in concrete, followed by 10 months’ maturation in large oak casks, of which 22% are new.

Food & Serving
This is a natural match for grilled meats, especially a well-marbled steak from the butcher or a chargrilled lamb cut. It also works beautifully with barbecue, peppery sausages, and richly seasoned dishes. Serve at around 16–18°C, and consider decanting for 1–2 hours if drinking young to let the aromatics fully open up.
