Adami Valdobbiadene Prosecco Superiore Col Fondo sui lieviti Brut Nature is a traditional, bone-dry sparkling wine that captures the authentic character of Conegliano Valdobbiadene. Made from 100% Glera and left on its lees in bottle, it offers a more artisanal, textural take on Prosecco with no added sugar and a distinct sense of history rooted in the Treviso hills.
Tasting Notes
Pale straw yellow in the glass, this Col Fondo immediately shows a lively, natural character. The aroma opens with fresh orchard fruit and delicate floral notes, followed by a subtle yeastiness and a hint of crusty bread that comes from the lees contact.
On the palate it is dry, crisp, and pleasantly bitter, with the fruit-driven freshness of Glera balanced by fine autolytic complexity. Over time, the wine can develop even more layered aromas and flavors from the lees, making it especially rewarding for those who enjoy traditional-method sparkling wines with a little rustic charm and depth.
Production
Produced in the Conegliano Valdobbiadene Prosecco Superiore DOCG area of Veneto, this wine comes from the classic hillside terroir of the Treviso region, where Glera thrives in well-exposed vineyards. It is made using the ancestral method, with secondary fermentation taking place in the bottle during spring in cool, dark conditions, and the wine is not disgorged, allowing the lees to remain in the bottle and shape the final style.
Food & Serving
This is an excellent match for salumi, fried seafood, antipasti, aged cheeses, and simple regional dishes that can stand up to its dry, slightly bitter edge. Serve well chilled at around 6–8°C, and gently turn the bottle before pouring if you want to integrate the lees; decanting is not recommended.
Producer
Adami is one of the historic names in Valdobbiadene and has played an important role in establishing the reputation of Prosecco Superiore from this part of Veneto. The producer is well regarded for expressing the character of the local hills with precision and authenticity, and for wines that respect both tradition and the identity of the Conegliano Valdobbiadene DOCG.
