Abbazia di Novacella Praepositus Sylvaner 2024 is a refined, semi-aromatic white wine from Alto Adige’s high-altitude Valle Isarco. Crafted from Sylvaner Verde, it combines expressive orchard-fruit aromas with a distinctive spicy mineral character, reflecting both the cool mountain climate and the region’s stony soils. It comes from Abbazia di Novacella, a historic monastery and winery with a winemaking tradition spanning around a thousand years.

Tasting Notes
The wine has a bright, pale golden-yellow colour with lively green highlights. Its aromatic profile is elegantly expressive, revealing ripe pear, apricot and subtle apple notes, complemented by fragrant elderflower and a delicate hint of coriander. On the palate, it is fresh and generously textured, with pronounced spicy minerality lending energy and structure. Carefully integrated oak maturation adds breadth and subtle complexity without overshadowing the fruit. The finish is long, precise and elegant. Enjoyable in its youth for its freshness, the wine can also develop additional harmony and complexity over the next few years when properly stored.

Production
The grapes come from vineyards in Bressanone and Varna, in the Valle Isarco, planted at approximately 650–700 metres above sea level with south and south-western exposures. The Guyot-trained vines grow in permeable moraine soils rich in mica schist, paragneiss and quartzite, which contribute to the wine’s distinctive mineral tension. Fermentation takes place under temperature control at 17°C. The wine is then matured in a combination of stainless-steel tanks, acacia casks and a smaller proportion of French barriques, before the individual components are blended into a harmonious final cuvée.

Food & Serving
Serve chilled at approximately 10–12°C. Its mineral freshness and refined texture make it an excellent partner for freshwater fish, shellfish, grilled prawns, asparagus, creamy risottos and poultry with delicate herbs. It also works well with Tyrolean and Alpine cuisine, particularly light dishes featuring fresh cheese or smoked fish. Decanting is not essential, although a brief aeration in the glass can help reveal the wine’s aromatic and mineral complexity.
