Abate Nero Trento Domini Nero Brut 2019 is a refined Trentodoc sparkling wine crafted entirely from Pinot Noir, offering a distinctly elegant take on the classic method. First produced from the 2008 harvest, it represents a bold and demanding project: to create a traditional sparkling wine in the great French style, but with the freshness and mountain character of Trentino.

Tasting Notes
In the glass, it typically shows a fine, persistent mousse and a bright, pale straw-gold hue, often with subtle coppery reflections from the Pinot Noir. The nose is delicate and precise, with notes of white flowers, crisp orchard fruit, citrus zest, and gentle hints of pastry, toasted bread, and almond. On the palate, it is dry, lively, and well-balanced, with firm acidity, a creamy texture, and a mineral backbone that gives the wine real tension and finesse. The Pinot Noir base brings added structure and depth, while the long lees aging contributes complexity and length. It should drink beautifully now and continue to evolve positively over the next few years.

Production
Made in Trentino Alto Adige under the Trentodoc appellation, this wine comes from a cool alpine terroir where altitude, temperature variation, and mountain soils help preserve freshness and aromatic precision. The grapes are harvested by hand at optimal ripeness, and the wine is produced using the traditional method, with secondary fermentation in bottle and extended aging on the lees to build texture and complexity.

Food & Serving
A versatile sparkling wine, it pairs especially well with oysters, shellfish, sushi, smoked salmon, risotto, and delicate poultry dishes. It also works beautifully as an aperitif. Serve well chilled at 6-8°C, and while decanting is not recommended, allowing the bottle a few minutes in the glass can help the aromas open up.
