Production

Harvesting is done selectively by hand in several passes, with some botrytized fruit included to build concentration and nuance. Fermentation takes place spontaneously with native yeasts in traditional Fuder casks or stainless steel, and the wine is matured without fining to preserve balance, fruit purity, and terroir expression.

This Auslese pairs beautifully with fruit-based desserts, blue cheese, and dishes from Asian cuisine where sweetness and acidity can play against spice or umami. Serve well chilled, ideally around 8–10°C, and consider brief aeration in the glass rather than full decanting. It also works wonderfully on its own as a special-occasion wine.
