The 2022 Hochgrassnitzberg Sauvignon Blanc from Weingut Walter Polz is a benchmark white from one of Südsteiermark’s most iconic Sauvignon sites. Sourced from the famed Ried Hochgrassnitzberg, it combines cool-climate precision, mineral drive, and Burgundian elegance in a style that speaks clearly of its terroir and the region’s long-standing reputation for world-class Sauvignon Blanc.

Tasting Notes
In the glass, it shows a refined, pale straw colour with a bright, crystalline sheen. The nose opens with quince, white peach, and a subtle flinty edge, giving the wine a cool, stony aromatic profile that feels both precise and expressive. On the palate, it is taut, elegant, and deeply structured, with a saline mineral core and a fresh, linear flow. Despite its concentration, the wine remains calm and finely layered, finishing long, mineral, and complex. It has excellent aging potential and should gain even more nuance over the next several years.

Production
Hochgrassnitzberg is one of the standout vineyard sites of Südsteiermark, defined by a southeast-facing slope and soils of shell limestone and sandy marl. These conditions, together with vines over 30 years old, yield grapes with concentration, freshness, and a strong sense of place. The fruit is selectively harvested by hand, then spontaneously fermented in a 2,000-litre oak cask without cooling, followed by a year of unsulphured maturation on the lees and further élevage in stainless steel.

Food & Serving
This Sauvignon Blanc pairs beautifully with scallops, turbot, poultry with truffle, and refined Asian dishes such as dim sum. Serve chilled at around 10–12°C to highlight its precision and mineral freshness. Decanting is not essential, but a brief aeration can help open its layered aromatics.
