The 2020 Lorch Kapellenberg Spätburgunder trocken from Chat Sauvage is a finely tuned Pinot Noir from one of the Rheingau’s most characterful sites. Sourced from the Lorch Kapellenberg, it combines the elegance of a Burgundian-style red with the mineral tension and structure that define this part of the Middle Rhine.

Tasting Notes
In the glass, it shows a deep, polished ruby-red colour. The nose opens with dark cherry, blackberry and subtle spice, layered with mineral, smoky notes that reflect the stony vineyard soils. On the palate, the wine is precise, taut and elegantly structured, with fine-grained tannins and lively acidity giving length and definition. Its mineral backbone adds depth and energy, and the 2020 vintage suggests strong ageing potential, allowing the wine to develop further complexity over the coming years.

Production
The grapes come from the Lorch Kapellenberg site in the Rheingau, where slate, quartzite and loess-clay soils bring tension, texture and depth to the wine. The fruit was carefully hand-harvested, spontaneously fermented, and matured for around 24 months in French barriques before being bottled with minimal filtration to preserve purity and terroir expression.

Food & Serving
This Spätburgunder pairs beautifully with game, veal, lamb, mushroom-based dishes and truffle preparations, as well as mature cheeses. Serve it at around 16–18°C, and decanting is recommended if the wine is young or just opened, to allow the aromatics and structure to fully unfold.

Chat Sauvage is known for crafting Pinot Noir in a style inspired by Burgundy, while staying true to the distinctive terroir of the Rheingau. The estate has built a strong reputation for precise, terroir-driven wines that showcase finesse, mineral character and age-worthiness, making it one of the region’s most respected names for Spätburgunder.
