Made with a purist, modern approach and bottled without dosage, it offers a serious sparkling wine style with real depth and tension.

Tasting Notes
In the glass, it shows a refined, lively profile with delicate bubbles and a bright, crystalline impression. The nose opens with red berries such as wild strawberries, redcurrants, and rosehip, lifted by fresh herbs and subtle hints of brioche, bread crust, and fine lees complexity from extended aging on the yeast. On the palate, the wine is taut, precise, and distinctly dry, with vibrant acidity and a salty mineral finish. The mousse is fine and creamy, while the long lees maturation adds texture and quiet complexity. It has excellent potential to age gracefully for several years, gaining even more nuance and depth over time.

Production
The grapes come from the steep Frankenthal site in Assmannshausen, a historic Spätburgunder vineyard in the Rheingau known for its cool exposure, altitude, and forest protection. Hand-harvested Pinot Noir was spontaneously fermented in used oak, then the base wine matured on full lees until August 2021 before undergoing traditional bottle fermentation. After 36 months on lees, it was disgorged in August 2024 and released as Brut Nature with no dosage.

Food & Serving
This sparkling wine works beautifully as an aperitif, but it also has the structure to pair with dishes such as salmon, poultry terrine, zucchini flowers, aged cheeses, or lightly spicy Asian cuisine. Serve chilled at 8–10 °C, and decanting is not necessary.
