The 2019 Lorch Kapellenberg Spätburgunder trocken from Chat Sauvage is a refined Rheingau Pinot Noir that blends Burgundian elegance with a distinctly mineral-driven German terroir. Sourced from one of the region’s standout Spätburgunder sites, it offers precision, depth, and a strong sense of place.

Tasting Notes
In the glass, it shows a bright, polished ruby-red color. The nose opens with ripe cherry, raspberry, and red berries, layered with subtle spice and a cool, stony mineral edge. On the palate, the wine is balanced and finely structured, with silky, fine-grained tannins and vibrant acidity that keep the fruit fresh and focused. The finish is long and harmonious, with enough structure to age gracefully over the next several years, gaining additional complexity and nuance.

Production
The grapes come from the Lorch Kapellenberg site in the Rheingau, where shale, quartzite, and loess-loam soils create a terroir that combines tension, warmth, and structure. The fruit was carefully hand-harvested, then spontaneously fermented and matured for around 24 months in French barriques before being bottled with minimal filtration to preserve precision and terroir expression.

Food & Serving
This Spätburgunder pairs beautifully with roast poultry, veal, game, mushroom dishes, truffle pasta, and mature cheeses. Serve at around 16–18°C, and decant briefly if desired, especially when opened young, to allow the wine’s aromatics and structure to fully unfold.
