Tasting Notes
In the glass, Wiston Estate Brut NV appears pale lemon-gold with a fine, persistent mousse that speaks to its long, slow aging on the lees. The nose is vibrant and inviting, opening with aromas of green apple, lemon zest, and freshly baked sourdough, layered with hints of grilled walnuts and dried apricots. Subtle autolytic notes—brioche, pastry, and a touch of nuttiness—add a sense of richness and refinement.
On the palate, the wine is crisp yet generous, with pinpoint bubbles and a silky mousse. Flavours of apple compote, buttered toast, and candied citrus peel unfold gradually, supported by a tense, chalky minerality that keeps everything lifted and focused. The dosage of 8 g/L brings just enough roundness to balance the naturally high acidity, leading to a long, mouthwatering, mineral-driven finish. Delicious on release, it is also capable of further development in bottle for several more years, gaining additional complexity and creaminess with time.
Production
The grapes for Wiston Estate Brut NV are grown on the chalk-rich soils of the South Downs in England, a terroir that shares geological similarities with Champagne and imparts a distinct, saline minerality and electric freshness to the wines. The classic blend—34% Chardonnay, 33% Pinot Noir, 33% Pinot Meunier—is harvested by hand late in the autumn to capture full flavour while retaining bright acidity. Whole clusters are gently pressed, and each variety is fermented separately in stainless steel to preserve purity and tension. The young wines rest for around eight months on their lees before being blended with 20–30% reserve wines, some dating back to 2009, to build depth and consistency of house style. After tirage, the wine undergoes a long, slow secondary fermentation and ages for 3–5 years on the lees at cool cellar temperatures (around 9–11 °C), developing fine bubbles and autolytic complexity before disgorgement and a final dosage of 8 g/L.

Wiston Estate Brut NV is a natural choice as an aperitif, where its bright acidity and fine mousse sharpen the appetite, but it also shines at the table. Pair it with oysters, scallops, and delicate white fish, or opt for classic British favourites like fish & chips, where the wine’s freshness cuts beautifully through the dish’s richness. It also works well with light poultry dishes, sushi, or soft, rind-washed cheeses. Serve well-chilled at around 8–10 °C; a narrow flute or tulip-shaped white wine glass will best showcase its aromatics and texture.
