Willi Schaefer’s Graacher Himmelreich Riesling Beerenauslese 1975 is a rare, mature Mosel sweet wine presented in a collectible 0.35-litre bottle. Made from hand-selected Riesling grapes and aged for more than four decades in bottle, it offers a remarkable combination of concentration, freshness and historic character.
Tasting Notes
The wine shows a deep golden hue, reflecting its long bottle maturation. Its mature bouquet reveals ripe peach and apricot alongside honeyed notes and the layered aromas typical of an aged German Beerenauslese.
On the palate, it is rich, sweet and full-bodied, with vibrant acidity providing balance and keeping the wine remarkably fresh. The finish is long, smooth and lingering. Properly stored, this 1975 vintage has excellent cellaring potential, although its condition and development will naturally depend on storage history.
Production
Sourced from the renowned Graacher Himmelreich vineyard in the Mosel, a site celebrated for producing elegant and long-lived Riesling. Beerenauslese is made from individually selected, exceptionally ripe grapes; the hand-harvested fruit delivers the concentration required for this prestigious Prädikat. The wine has subsequently matured for more than 45 years in bottle, allowing its fruit, sweetness and acidity to develop into a complex, mature expression.
Food & Serving
Serve well chilled at approximately 8–10°C. This Beerenauslese is a natural partner for fruit-based desserts, crème brûlée, pâtisserie and blue or washed-rind cheeses, while its acidity also makes it a beautiful match for foie gras and richly flavoured dishes. Decanting is not usually necessary, but careful decanting may be beneficial if sediment is present; handle the mature bottle gently and serve soon after opening.
