Description
Weingut Wolf Sekt #03 Extra Brut is a serious, refined German sparkling wine from the Nordpfalz, presented in an impressive Magnum format. The third edition of Dennis Wolf’s white winemaker Sekt blends Pinot Noir, Chardonnay and Pinot Blanc, combining extended lees ageing with exceptionally low dosage for a precise, dry and gastronomic style. It is a compelling example of the growing ambition and quality of Germany’s traditional-method sparkling wine scene.
Tasting Notes
Bright and elegant in the glass, the Sekt opens with a nuanced bouquet of fine citrus, orchard fruit and subtle pastry-like notes from more than three years of bottle ageing on the lees. The Pinot Noir contributes structure, while Chardonnay brings freshness and finesse, and Pinot Blanc adds a gentle, rounded fruit character.
On the palate, it is dry, focused and harmonious, with lively acidity, a fine mousse and a lingering finish. The minimal dosage of just 1.5 g/l allows the wine’s natural freshness and vinous character to take centre stage. Already highly expressive, it can develop further complexity in bottle over the coming years when stored properly.
Production
The cuvée combines 40% Spätburgunder, 38% Chardonnay and 22% Weißburgunder from the Nordpfalz. The grapes are harvested early, between late August and September, to preserve the acidity essential for balanced sparkling wine. The base wine is matured in oak and undergoes malolactic fermentation, with no filtration or other clarification. Vintages 2018, 2019 and 2020 were blended before tirage in February 2022, followed by just over 36 months of bottle ageing on the lees. After disgorgement in March 2025, the Sekt was bottled as Extra Brut with a dosage of only 1.5 g/l.
Food & Serving
Serve well chilled at approximately 8–10°C in white wine or sparkling wine glasses to reveal its layered aromas and textured palate. Its dry, fresh profile is an excellent match for oysters, shellfish, sushi, smoked trout, grilled fish and delicate poultry dishes. It also pairs beautifully with creamy vegetable preparations and refined starters. Decanting is not necessary, although allowing the wine a few minutes in the glass—or carefully pouring it into a suitable carafe—can help open its more complex, mature notes.
