This organic Riesling comes from Birkweiler’s distinctive Rotliegenden soils, where red clay slate gives the wines a character unique within the Pfalz. Made from younger vines and lower-lying parcels in the Kastanienbusch area, it offers a village-wine expression of this notable vineyard site.

Production
The vineyards lie on the Rotliegenden formation of red clay slate in Birkweiler’s Kastanienbusch area. The younger vines and parcels lower in the valley are used for this village wine, while higher parcels and older vines are generally reserved for the estate’s Großes Gewächs. The healthy Riesling grapes are destemmed and lightly crushed, then left on the skins for 24 hours before pressing. Fermentation and maturation take place in stainless steel; the contrast between oxidation during the must stage and a highly reductive environment during élevage is a defining feature of the estate’s approach. Harvesting methods are not specified.

Food & Serving
Serve chilled, around 8–10°C, with seafood, grilled fish, poultry, or dishes featuring fresh herbs and citrus. Its Riesling profile should also suit lightly spiced Asian cuisine. Decanting is not generally necessary; if the wine seems closed, give it a little time in the glass.
