Production

This natural process reduces the water content of the berries while intensifying their sugars and flavours. The wine has continued to develop in bottle since the 1976 harvest, contributing to its deep colour and mature aromatic complexity.

Food & Serving
Serve well chilled, ideally at approximately 8–10°C, allowing the wine to open gradually in the glass. It is an excellent match for fruit-based desserts, apricot or peach pastries, crème brûlée, foie gras and mature blue cheese, while its concentration also makes it compelling on its own as an aperitif or contemplative after-dinner wine. Decanting is not usually essential, but careful decanting may be considered if sediment is present; for such an old wine, gentle handling is recommended.
