Vollereaux Champagne Demi-Sec is a beautifully poised demi-sec that bridges the gap between indulgent sweetness and refreshing lift. Crafted from equal parts Chardonnay, Pinot Meunier and Pinot Noir, it offers a gently gourmand style without ever feeling heavy. This non-vintage cuvée spends three years resting on its lees, drawing depth and finesse from Vollereaux’s historic chalk cellars beneath Épernay.

Tasting Notes
In the glass, Vollereaux Demi-Sec shows a bright, pale gold hue with a fine and persistent mousse that hints at its extended ageing. The nose is immediately charming and floral, with white blossoms leading the way before opening into notes of fresh white peach, crisp apple and a twist of citrus. As it sits in the glass, a subtle touch of acacia honey and brioche begins to emerge, adding complexity. On the palate, this Champagne has a generous, rounded texture supported by an elegant, creamy mousse. The 41 g/L of residual sugar brings a tender sweetness, beautifully balanced by a lively, refreshing acidity that keeps the wine bright and energetic. Flavours of orchard fruits, peach, citrus zest and honeysuckle glide across the palate, finishing with a delicate echo of honey, white flowers and just-picked apples. Enjoy it now for its open, inviting character; it will hold well for several years, gaining a little more honeyed complexity while retaining its freshness.

Production
The grapes for Vollereaux Champagne Demi-Sec come from estate vineyards on the southern slopes of Épernay in the Marne Valley, rooted in a mix of chalk and clay that gives both tension and generosity to the fruit. Here, Chardonnay, Pinot Noir and Pinot Meunier are harvested at optimal ripeness—timing that the family considers part of their inherited savoir-faire. The base wines are vinified separately, then meticulously blended in Vollereaux’s 200-year-old chalk cellars, where modern presses work alongside traditional equipment. After the second fermentation in bottle (méthode traditionnelle), the wine spends three years ageing on its lees before disgorgement and dosage to demi-sec level, resulting in a Champagne that marries richness, finesse and balance.

Food & Serving
This demi-sec Champagne is a natural partner for fruit-based desserts—think lemon tart, peach pavlova or a simple bowl of fresh berries—as well as lightly sweet pastries and almond cakes. It also pairs beautifully with salty and spicy dishes, such as blue cheese, foie gras, paté en croûte, or subtly spiced Asian cuisine, where its touch of sweetness softens heat and accentuates aromatics. Serve well-chilled at 8–10°C (46–50°F) in a tulip-shaped glass to showcase both aroma and texture. A brief 10–15 minutes out of the fridge before serving is ideal; decanting is not necessary, but allowing the wine a few moments in the glass lets its floral and honeyed notes fully unfold.

Champagne Vollereaux is a sixth-generation family estate with roots dating back to 1805, when the first vines were planted in the village of Pierry in the Marne Valley. From the first bottle released in 1923 under Victor Vollereaux to today’s estate led by Franck Vollereaux, the house has remained firmly family-run, with different generations sharing responsibilities between vineyard, cellar and hospitality. With around 40 hectares under vine—largely Chardonnay, complemented by Pinot Noir and Meunier—on the prized slopes around Épernay, including Premier Cru Pierry, Vollereaux is known for crafting Champagnes that blend precision, elegance and approachability. Their historic chalk cellars, carved into Épernay’s limestone, and their long-standing focus on careful harvesting and expert blending have cemented their reputation as a reliable, quality-driven grower in one of Champagne’s most celebrated areas.
