Vergnes Blanquette de Limoux Carte Noir Brut is a finely crafted traditional-method sparkling wine from the historic hills of Limoux in southern France. Blending Mauzac with Chenin Blanc and Chardonnay, it offers a refined, gently fruity profile that’s both elegant and effortlessly drinkable. As one of the world’s oldest sparkling wine styles, Blanquette de Limoux carries a legacy dating back to 1531, when monks at the Abbey of Saint-Hilaire first mastered the art of bubbles.

Tasting Notes
In the glass, this Blanquette de Limoux shows a pale straw-yellow color with subtle green reflections and a fine, persistent mousse. The nose is delicate yet expressive, opening with white blossom, acacia, and hawthorn, followed by notes of crisp green apple, pear, and a touch of stone fruit, underpinned by hints of fresh bread dough and citrus zest. On the palate, Vergnes Carte Noir Brut is dry, fresh, and finely balanced, with Mauzac bringing lively orchard-fruit character, Chenin adding tension and acidity, and Chardonnay contributing finesse and texture. Flavors of green apple, white peach, and pear mingle with gentle brioche notes and a subtle almond nuance on the finish. The mousse is creamy but not heavy, giving a soft, caressing mouthfeel. Production
Blanquette de Limoux is born in the cool, elevated vineyards of Languedoc-Roussillon, where limestone and clay soils, along with Atlantic and Mediterranean influences, provide ideal conditions for slow, even ripening and vibrant acidity. Grapes are typically harvested in the early morning to preserve freshness and aromatic purity, with careful sorting to ensure only healthy, ripe clusters are used. Vergnes employs the traditional (Champagne) method: a gentle pressing, temperature-controlled primary fermentation to retain fruit character, followed by secondary fermentation in the bottle and aging on fine lees to build texture, complexity, and a fine, persistent bead before disgorgement and dosage.

Vergnes Blanquette de Limoux Carte Noir Brut is a natural choice as an aperitif, pairing beautifully with canapés, light shellfish, oysters, smoked salmon, sushi, or simple goat cheese. It also complements delicate starters like ceviche, salads with citrus dressings, and lightly seasoned poultry or vegetable terrines. Serve well-chilled at 6–8°C (43–46°F). Decanting is not necessary; simply open the bottle shortly before serving to enjoy the wine’s lively bubbles and fresh aromatics at their best.
