Venica’s Ronco del Cerò Sauvignon 2025 is an elegant, aromatic white from Collio, shaped by the region’s distinctive hillside terroir. Made from Sauvignon Blanc grown across seven separately vinified vineyard parcels, it combines vivid fruit and herb notes with a pronounced mineral salinity. The historic Ronco del Cerò hill, acquired by the Venica family in 1929, also marks the beginning of the winery’s Sauvignon tradition.
Tasting Notes
The nose is intense and expressive, with gooseberry, bergamot and passion fruit alongside fresh boxwood and calamint. On the palate, these aromas carry through in a lively, precise style, balanced by marked salinity and a pleasantly velvety texture. The wine’s colour and specific aging potential are not stated.
Production
The grapes come from the south-facing Ronco del Cerò hill in Collio, where marl and sandstone soils lend the wine its mineral character. The area’s temperate microclimate is sheltered by the Julian Prealps and moderated by Adriatic breezes. After destemming, the grapes undergo cold skin maceration in oxygen-protected vessels, using recovered fermentation carbon dioxide to preserve aromatic freshness. Fermentation and maturation take place in stainless steel tanks and large casks, followed by six months on the lees and bottle aging.
Food & Serving
Its freshness and herbal, citrus-leaning character make it a natural match for seafood, grilled fish, shellfish, asparagus and fresh goat’s cheese. Serve well chilled, around 8–10°C. Decanting is generally unnecessary; opening the bottle shortly before serving should allow its aromas to unfold.
Producer
Venica is based in Collio, in Friuli-Venezia Giulia, where the family’s story with the Ronco del Cerò hill began in 1929. The cru has since become a symbol of the region and the cornerstone of the estate’s Sauvignon tradition. Venica vinifies fruit from seven vineyard parcels separately to build aromatic complexity, and its considered use of oxygen-protected vessels helps preserve the wine’s freshness and expressive character.
