Venica & Venica’s Ronco delle Cime is a single-vineyard Friulano from Collio, offering a distinctive expression of a grape historically known as Sauvignon Vert. Made by a family estate founded in 1930, it combines the region’s mineral character with a generous, finely balanced style.
Tasting Notes
Bright golden-yellow in the glass, it opens with aromas of apple, white peach and wild flowers. The palate is lively and fresh, with a pronounced mineral, saline edge balanced by a full texture and a long, almond-tinged finish.
Its freshness and structure make it well suited to enjoying while young, though careful cellaring may allow its flavours to develop further. No specific ageing window is provided.
Production
The grapes come from the Ronco delle Cime vineyard in Dolegna del Collio, around 200 metres above sea level. Its Eocene marl and sandstone soils contribute to the wine’s mineral character, while low-impact vineyard practices support the expression of the site. After harvest, the grapes undergo cold maceration in oxygen-protected vessels; fermentation carbon dioxide is reused to help limit the need for antioxidants. The wine spends about six months on its lees, partly in large wooden casks and partly in stainless steel, before blending and bottling timed to the spring full moons.
Food & Serving
Pair it with shellfish, porcini risotto or air-dried ham. It should also suit other delicate seafood and savoury dishes that complement its fresh, mineral profile. Serve lightly chilled, around 10–12°C; decanting is generally unnecessary, though a few minutes in the glass can help its aromas unfold.

The Ronco delle Cime cuvée has been recognised with Gambero Rosso’s prestigious Tre Bicchieri award.
