Tasting Notes
In the glass, Les Cotes Calcaires Nature shows a bright, pale lemon hue with shimmering silver highlights and a fine, persistent mousse. The nose is vibrant and mineral-led, opening with notes of lemon zest, crisp green apple and pear, followed by hints of white flowers, fresh bread dough, chalk dust, and a subtle saline edge.
On the palate, the wine is tense, linear and ultra-pure, with a racy backbone of acidity that is beautifully balanced by a delicate, creamy texture from extended lees aging. Citrus and orchard fruits mingle with notes of grapefruit pith, crushed stone, and a touch of hazelnut or brioche in the background. The finish is long, dry and mouthwatering, leaving a lingering impression of chalk and sea breeze. Production
Les Cotes Calcaires Nature is sourced from vineyards rooted in classic Champagne chalk (calcaires), which lends both tension and a distinct saline minerality to the wine. The vines grow on cool, well-drained slopes in the Champagne region of France, where a marginal climate and limestone-rich subsoil encourage slow ripening and concentrated, expressive fruit. Harvest is carried out by hand, with rigorous sorting to ensure only healthy, ripe bunches make it to the press. In the cellar, Tristan Hyest favors gentle pressing, a careful, low-intervention vinification and extended aging on the fine lees to build texture without masking the terroir. Bottled without dosage, this “Nature” Champagne relies entirely on the natural balance of the base wines, allowing the chalky soils and precision of the winemaking to shine through.
Food & Serving
This Champagne’s dry, mineral profile makes it a superb partner for seafood and refined, delicate dishes. Try it with freshly shucked oysters, scallop crudo, carpaccio of white fish, sushi and sashimi, or simple grilled prawns with lemon and herbs. It also pairs beautifully with goat’s cheese, tartare of sea bream or tuna, light ceviches, and minimalist vegetable dishes featuring fennel, asparagus or artichoke. Serve well-chilled at around 8–10°C (46–50°F).
