Tasting Notes
In the glass, Treana Cabernet Sauvignon 2021 shows a deep, opaque ruby to purple hue with a youthful, inky core and slow, stained tears on the swirl. The nose is immediately generous and inviting: floral top notes mingle with intense aromas of black cherry, blackberry and cassis, layered with mocha, sweet vanilla, caramel, leather and a touch of cigar box spice. On the palate, this is classic Paso Robles Cabernet in full, plush mode. Concentrated dark fruit—black cherries, ripe blackberries and blackcurrant—arrives first, followed by chocolate, roasted coffee, baking spices and a hint of toasted oak. Fine, supple tannins are well-integrated and polished, giving a smooth, almost creamy texture without losing structure. The finish is long and comforting, with lingering notes of dark fruit, vanilla and subtle oak-driven sweetness. While the 2021 is delicious and open-knit right now, it has the stuffing to evolve gracefully for another 5–8 years under good cellaring conditions, gaining more savory and tertiary complexity over time.

Production
Treana Cabernet Sauvignon 2021 is sourced from select vineyard sites across California’s Central Coast, with a strong Paso Robles imprint: warm, sunny days, cool marine-influenced nights and well-drained soils that naturally concentrate flavor in the grapes. The 2021 season saw a typical warm spring and cool nights, followed by several summer heat waves moderated by ocean breezes in the evenings—ideal conditions for developing ripe, dark fruit flavors while preserving balance. The blend is 81% Cabernet Sauvignon supported by 7% Petite Sirah, 5% Merlot, 3% Cabernet Franc, 2% Malbec, 1% Mourvèdre and 1% Syrah, each component adding depth, color and texture. Grapes are harvested at optimal ripeness, then destemmed and fermented in stainless steel to capture pure fruit expression before aging. The wine matures for 10 months in a mix of French and American oak barrels, 85% of which are used, allowing the oak to frame the wine with notes of vanilla, spice and toast without overwhelming the fruit.

Food & Serving
This is a versatile Cabernet that shines alongside hearty, flavorful dishes. Think grilled ribeye or strip steak, short ribs, burgers with aged cheddar, lamb chops, or slow-braised beef with herbs and root vegetables. It also pairs beautifully with barbecue pork, smoky ribs, rich pasta dishes like beef ragù, and aged hard cheeses such as cheddar, Gouda or Comté. Serve at 16–18°C to make the most of its aromatics and silky texture. A short decant of 30–45 minutes helps the wine open up and integrate its oak and fruit, though it’s ready to enjoy straight from the bottle if you’re in the mood for immediate drinking pleasure.
