Grapes are typically harvested by hand, parcel by parcel, to ensure optimal ripeness and precision in selection. In the cellar, the philosophy leans toward minimal intervention: gentle handling of the fruit, spontaneous fermentation with native yeasts, and a restrained use of oak or neutral vessels (such as concrete or large old foudres) to preserve the purity of the fruit and the character of the terroir. The result is a wine that emphasizes elegance, texture, and transparency over heaviness or extraction.
