The 1992 Rauenthaler Baiken Riesling Eiswein Versteigerung is a rare auction wine from Staatsweingüter Kloster Eberbach, one of the Rheingau’s most historic estates. Made from hand-picked Riesling grapes harvested while naturally frozen, this limited-production Eiswein combines remarkable sweetness and concentration with the vibrant acidity that gives the style its hallmark balance. Carefully stored and offered in excellent condition, it is a compelling choice for collectors and lovers of mature German dessert wines.

Tasting Notes
In the glass, this mature Rheingau Eiswein is expected to show a rich golden to amber hue, reflecting its age and concentration. The nose may reveal layers of ripe stone fruit, candied citrus, honey and dried fruit, with the developing complexity typical of a well-preserved Riesling Eiswein. On the palate, expect an intense, luscious sweetness supported by bright Riesling acidity, with flavours of peach, apricot, citrus marmalade and honeyed fruit. The finish should be long, focused and refreshing rather than heavy. At more than three decades old, this is a mature wine with significant bottle-age character; its remaining potential will depend on storage conditions and provenance, but well-kept Eiswein can continue to develop gracefully for many years.

Production
The wine comes from the Rauenthaler Baiken vineyard in the Rheingau, a prestigious site known for producing distinctive, finely structured Rieslings. Eiswein is made only when healthy grapes remain on the vine until temperatures fall below freezing; the hand-picked berries are pressed while frozen, leaving much of the water behind as ice and concentrating the sugars, acidity and flavour compounds. The result is a naturally sweet wine of exceptional intensity. As a Versteigerungswein, this bottling was presented through the traditional German auction system and produced in limited quantities.

Food & Serving
Serve well chilled at approximately 8–10°C in small white-wine or dessert-wine glasses. It is an elegant match for foie gras, blue cheese, fruit-based desserts, crème brûlée, apple tart and fresh or poached stone fruit. Its acidity also makes it a beautiful partner for lightly sweet or savoury dishes with a touch of spice. Decanting is generally unnecessary; however, carefully standing the bottle upright before opening and pouring slowly can help separate any natural sediment that may have developed with age.
