A rare 1978 auction wine from Staatsweingüter Eltville at Kloster Eberbach, this Assmannshäuser Höllenberg Spätburgunder Weißherbst combines the richness of a Beerenauslese with the concentration of an Eiswein. Produced from Pinot Noir grapes and released through the Rheingau’s prestigious wine auction tradition, it is a remarkable collector’s bottle and a memorable choice for milestone occasions.
Tasting Notes
The wine is described as having a luminous golden colour, reflecting its long evolution in bottle. Its mature bouquet brings together ripe fruit, honey and warm spice, while the palate is full-bodied and layered, balancing pronounced sweetness with refreshing acidity. A long, lingering finish completes the experience.
At more than four decades old, this is a mature wine best appreciated for its complexity and rarity rather than youthful fruit. Properly stored bottles may continue to offer pleasure, although the condition and provenance of an individual bottle are important considerations with a vintage of this age.
Production
The wine comes from the celebrated Assmannshäuser Höllenberg vineyard in the Rheingau, a site particularly renowned for Spätburgunder. The grapes were hand-selected, and the Eiswein-Beerenauslese designation indicates an exceptionally concentrated harvest made from highly ripe, botrytised or individually selected berries, with the Eiswein element traditionally requiring grapes to be harvested while frozen. The wine was matured in oak casks before developing further complexity through extended ageing.
Food & Serving
Serve lightly chilled at approximately 10–12°C, allowing the aromas to open in the glass. Its sweetness and acidity make it a natural partner for foie gras, pâté, blue cheese and fruit-based desserts, while it can also be enjoyed on its own as a contemplative after-dinner wine. Decanting is not essential, but a careful transfer to remove any sediment may be beneficial; for a fragile mature wine, opening shortly before serving and tasting first is recommended.

Kloster Eberbach is one of Germany’s historic wine estates, founded by Cistercian monks in 1136 and closely associated with the development of quality viticulture in the Rheingau. Today, the Staatsweingüter Eltville continues this legacy across the region’s distinguished vineyards, including Assmannshausen and the Höllenberg. Auction wines from the estate represent some of its most exclusive and limited releases, making this 1978 bottling a significant piece of Rheingau wine history.
