A remarkable piece of Rheingau wine history, this 1936 Assmannshäuser Höllenberg Spätburgunder Rot-Weiß Edelbeerenauslese Cabinet from Fass No. 49 was produced by the Staatsweingüter Eltville, now associated with the historic Kloster Eberbach estate. Made from exceptionally ripe grapes sourced from one of Germany’s most celebrated Pinot Noir vineyards, it offers the rare opportunity to experience a wine with nearly nine decades of bottle age. As with any wine of this vintage, its condition and evolution should be assessed at opening.

Tasting Notes
The wine is expected to show a mature ruby-garnet to tawny appearance, with the colour and clarity reflecting its considerable age. Its bouquet may reveal layers of dried red fruit, preserved berries, warm spices and earthy, savoury nuances, potentially accompanied by notes of leather, forest floor and sweet tobacco. On the palate, the wine is described as full-bodied and powerful, with concentrated mature-fruit character and a complex, spicy finish. At this age, freshness, sweetness and structure will depend greatly on storage and bottle condition, but a well-preserved example may offer an unusually deep and contemplative tasting experience. It is best approached as a historic collector’s wine rather than judged solely by the standards of a young Spätburgunder.

Production
The wine comes from Assmannshäuser Höllenberg, a steep and highly regarded Rheingau vineyard known for producing distinctive Spätburgunder with depth and structure. The Edelbeerenauslese designation indicates a selection of exceptionally ripe grapes, harvested by hand. According to the original description, the wine received careful artisanal treatment and extended maturation in cask No. 49, contributing to its richness and complexity before many decades of bottle ageing.

Food & Serving
Serve slightly cool, around 14–16°C, allowing the wine to warm gradually in the glass. Its mature fruit and savoury complexity could complement game birds, roasted duck, veal with mushroom sauce, aged ham or refined pâtés; if the wine retains noticeable sweetness, it may also work beautifully with blue cheese or a delicate fruit-based dessert. Decanting should be approached cautiously: a gentle transfer may remove sediment, but an almost ninety-year-old wine can fade quickly once exposed to air. Opening shortly before serving and tasting periodically is recommended.
