Sapaio Bolgheri Volpolo 2024 is an organic red from one of Tuscany’s most exciting coastal appellations, bringing together the elegance and power that have made Bolgheri famous. Built around Cabernet Sauvignon with Merlot and Petit Verdot, it offers a polished, contemporary expression of the region’s Bordeaux-inspired style.

Tasting Notes
In the glass, it shows a clear ruby-red color. The nose opens with wild berries and earthy nuances, layered with floral hints and aromatic touches of black chervil, chervil, and star anise. The palate is rich yet graceful, with a firm tannic backbone and a sense of depth that carries through to a long, persistent finish. While already appealing for its freshness and structure, it should also develop well over the next several years as the wine integrates further in bottle.

Production
Produced in Bolgheri, Tuscany, this wine reflects the area’s warm maritime climate and soils that are well suited to Cabernet Sauvignon, Merlot, and Petit Verdot. Fermentation takes place in temperature-controlled stainless-steel tanks with extended maceration, followed by malolactic fermentation in French oak. The wine is then matured for 16 months in French oak barriques and tonneaux before spending a further 4 months in bottle.

Food & Serving
This is an excellent match for grilled beef, roast lamb, game, and rich Mediterranean dishes such as braised short ribs or mushroom ragù. Serve at 16–18°C, and consider decanting for 1–2 hours to let the wine fully раскрыть its aromas and soften its structure.
