Description

From Salvioni’s small La Cerbaiola estate, this is a highly sought-after, traditional Brunello di Montalcino made from Sangiovese. The 2018 vintage favors perfume, freshness and structure over sheer ripeness, with a measured style that reflects Brunello’s long-standing tradition of wines built to evolve.

Tasting Notes
Aromatic and layered, with sour cherry, cranberry and raspberry alongside dried flowers, earth, coffee, cocoa, iron and balsamic spice. The palate is darker and more concentrated than the nose suggests, balanced by pronounced acidity and firm, high tannins that give the wine a long finish and considerable aging potential. It can be enjoyed after extended aeration, but further cellaring should allow secondary notes of leather, dried herbs and forest floor to emerge.

Production
The wine is made from Sangiovese using traditional vinification, followed by extended maturation in cask and bottle. Specific details about the vineyard’s terroir and harvesting methods are not available.

Food & Serving
Serve with a rich main course such as braised beef, slow-roasted lamb or game, or pair it with aged hard cheeses. Aim for approximately 16–18°C, and decant for several hours before serving to give the wine time to open.
