Created by Vittorio Fiore after years of study and reflection, it is a wine that aims to express both power and elegance in equal measure.

Tasting Notes
In the glass, Il Carbonaione typically shows a deep ruby color with vivid intensity. The nose is shaped by ripe red cherry, wild berries, violet, Mediterranean herbs, and a subtle earthy, mineral edge that reflects its Tuscan origins. On the palate, it is concentrated yet refined, with Sangiovese’s signature freshness carrying layers of red fruit, spice, savory complexity, and well-integrated tannins. The wine is built for development, with the structure and balance to age gracefully for several years, gaining depth and nuance over time.

Production
Il Carbonaione comes from the Carbonaione vineyard in Greve in Chianti, an area known for its favorable exposure and distinctive soils that bring both structure and finesse to Sangiovese. The grapes are harvested with care and vinified with close attention by Vittorio Fiore and his son Jurij, whose hands-on approach is aimed at preserving the purity of the fruit and the character of the terroir.

This wine pairs beautifully with grilled or roasted red meats, Tuscan-style game, aged cheeses, and rich pasta dishes with meat ragù or wild mushroom sauces. Serve at 16–18°C, and consider decanting for about 1–2 hours to allow the wine to open fully and show its aromatic complexity.
