Description

Paul Dangin Champagne Les Sels Minéraux Dosage Zero is a pure, uncompromising expression of Champagne, made without dosage to let the fruit, minerality, and precision speak for themselves. Crafted from Chardonnay and Pinot Noir, it offers a focused, dry style that highlights the freshness and tension the region is known for. Paul Dangin is a historic family name in Champagne, with roots in the Côte des Bar area where authenticity and terroir have long been central to the house style.

Tasting Notes
In the glass, this Champagne typically shows a bright pale gold color with a lively, fine mousse. The nose is crisp and expressive, with notes of citrus peel, green apple, white flowers, and a distinct mineral edge that gives the wine its character. On the palate, it is bone-dry, refreshing, and precise, with zesty acidity, clean orchard fruit, and a saline, chalk-driven finish. The dosage zero style adds extra tension and clarity, making the mineral backbone especially prominent. This is a Champagne built for drinkability and finesse rather than richness, and while it is excellent now for its energy and purity, it can also gain subtle complexity with a few years of cellaring.

Production
Paul Dangin Les Sels Minéraux Dosage Zero is produced in Champagne, where chalky and mineral soils help shape the wine’s bright, linear profile. The blend of Chardonnay and Pinot Noir is selected to balance freshness, structure, and elegance, and the grapes are typically harvested by hand to preserve quality. Vinification is carried out with the goal of expressing terroir and precision, followed by traditional Champagne bottle fermentation, with no dosage added at disgorgement to maintain the wine’s dry, focused style.

Food & Serving
This Champagne is an excellent partner for oysters, shellfish, sushi, sashimi, ceviche, or delicate white fish. It also works beautifully with goat cheese, light tempura, and other dishes where freshness and texture matter. Serve well chilled at around 6–8°C, and decanting is not recommended; simply open and pour to preserve the mousse and the wine’s lively character.

Producer
Paul Dangin is a family-owned Champagne producer with a strong connection to the Côte des Bar, one of the southernmost and most distinctive parts of the Champagne region. The house is known for wines that emphasize authenticity, balance, and regional expression rather than heavy winemaking intervention. Over time, Paul Dangin has built a reputation for reliable, terroir-driven Champagnes that appeal to drinkers looking for clarity and craftsmanship.
