Tasting Notes
In the glass, this Ripasso Superiore typically shows a deep ruby colour with garnet reflections, hinting at both freshness and concentration. The nose is generous and layered, with ripe cherry, dried plum, sweet spice, and subtle floral notes, supported by hints of cocoa and a gentle savoury edge.
On the palate, it is smooth and well-structured, with juicy red and dark fruit, soft tannins, and the rounded richness that comes from the Ripasso method. The finish is long and elegant, balancing warmth and freshness, and it has the potential to develop additional complexity over the next few years.
Production
The grapes come from Valpolicella in Veneto, a historic region where hillside vineyards and a mix of clay, limestone, and well-drained soils help preserve freshness while building ripe fruit character. Pasqua’s Cascina San Vincenzo project is focused on sustainable cultivation and production, working in harmony with the natural evolution of the vineyard.
As a Ripasso Superiore, the wine is produced using the traditional method of refermenting Valpolicella wine on Amarone pomace, which adds colour, texture, and depth before maturation. The result is a wine that bridges the brightness of Valpolicella with the richness and complexity associated with Amarone-style winemaking.
Food & Serving
This wine pairs beautifully with roasted meats, braised beef, game, and rich pasta dishes such as pappardelle with meat ragù. It also works well with aged cheeses and mushroom-based dishes. Serve at around 16–18°C, and decant for 30–60 minutes if possible to allow the aromatics and structure to open fully.
