Crafted from partially dried fruit and aged for two years in oak, it delivers intensity, depth and polish in equal measure. This limited Double Magnum comes in an exclusive wooden box, making it an impressive centrepiece for the table or a standout gift for any serious Italian wine lover.

Tasting Notes
In the glass, the wine shows a deep, shimmering ruby-red colour with an almost opaque core, hinting at its concentration and richness. The nose is intense and layered: first come the spicy notes of black pepper, vanilla and nutmeg, followed by ripe cherry and blackberry, and a delicate floral lift that recalls dried violets and wildflowers. On the palate, PaCo Sensazioni di Paolo is velvety and silk-smooth, with a surprising freshness that keeps the generous fruit in perfect balance. Ripe red and dark berries, sweet spice and a gentle touch of oak unfold across the mid-palate, supported by fine, polished tannins and a full, well-structured body. The finish is long and persistent, echoing with notes of ripe cherries, blackberries and warm baking spices. Enjoyable now for its plush texture and aromatic intensity, this 2021 has the structure and acidity to evolve gracefully over the next 6–10 years, especially in Double Magnum format, which naturally extends its aging potential.

Production
The fruit for this wine comes from Paolo Cottini’s vineyards in the heart of historic Valpolicella, where hillside sites with differing altitudes and exposures lend complexity and character to the blend. A portion of the grapes is carefully dried in the traditional appassimento style to concentrate flavour and structure, while the remaining fresh grapes are gently pressed and fermented in stainless-steel tanks. After fermentation, the wines from dried and fresh fruit are combined, creating a cuvée that marries richness with vibrancy. The young wine is then aged for 24 months in oak barrels, allowing the tannins to soften and the spice, fruit and floral notes to knit together into a harmonious whole before bottling in the impressive Double Magnum format.

Food & Serving
This is a natural partner for rich, flavourful Italian dishes such as pasta alla Norma, baked pasta with aubergine and tomato, or hearty ragù-based pastas. It also shines with grilled or seared red meats like ribeye steak, lamb chops, or slow-braised beef, and can handle aged cheeses with ease. Serve at 16–18°C to highlight both its freshness and depth. Decant for 1–2 hours before serving, especially in its youth and in Double Magnum, to fully open up the aromatic complexity and achieve a beautifully supple texture at the table.

Producer
The Paolo Cottini estate is a relatively young label, founded in 2010 by husband-and-wife team Paolo and Sara, yet it draws on four generations of family experience in Valpolicella. Based in the medieval village of Castelrotto in San Pietro in Cariano, the winery sits at the heart of one of Italy’s most historic and respected red wine regions. Their vineyards are spread across two prime zones of classic Valpolicella—Ca’ del Gallo in the Negrar valley at around 580 metres above sea level, and Valgatara at around 250 metres—giving them a mosaic of terroirs to work with. All vines are trained in the traditional pergola system and harvested by hand, ensuring careful selection in the vineyard. While they honour regional tradition in their DOC and DOCG wines, Paolo and Sara use their IGT bottlings like PaCo to express a more personal, contemporary vision, blending native varieties such as Corvina, Corvinone and Rondinella with a touch of Syrah to create wines that are both distinctive and excellent value for their quality.
