Rated 4.2 stars on Vivino, this is a modern classic from the heart of historic Valpolicella Classico.

Tasting Notes
In the glass, this 2018 Amarone pours a deep, almost opaque garnet with a rich, velvety rim – the colour alone hints at its concentration and intensity. The nose opens with bright red cherry, blackcurrant and ripe dark plum, soon followed by classic Amarone notes of dried figs, raisins and dates. Delicate nuances of tobacco leaf, cedar and cigar box from long barrel aging weave in, together with hints of sweet spice, cocoa and a touch of roasted coffee. On the palate, the wine is full-bodied and powerful, yet polished, with a plush texture and firmly structured tannins. Intense flavours of black cherry, dark berries and macerated plum are layered with dark chocolate, espresso, mocha and subtle vanilla undertones. Despite its 16% alcohol, the balance of fruit, tannin and acidity keeps it poised rather than heavy. The finish is long, warming and persistent, with lingering notes of dried fruit and fine spice. Thanks to its solid structure and Double Magnum format, this 2018 has excellent aging potential and can comfortably evolve in the cellar for 10+ years, gaining even more complexity and tertiary aromas.

Production
Sourced from Paolo Cottini’s vineyards in the historic Valpolicella Classico area, the grapes come from two distinct sites: Ca’ del Gallo in the Negrar valley at around 580 metres with southwest exposure, and Valgatara at about 250 metres with southeast exposure. This contrast in altitude, aspect and microclimate lends both freshness and richness to the final blend. The vines are trained using the traditional pergola system, and all grapes are hand-harvested to ensure perfect selection. The cuvée is composed of 55% Corvina, 35% Corvinone and 10% Rondinella. After harvest, the grapes undergo the classic appassimento process, drying for 90–110 days to concentrate sugars, aromas and phenolics. Fermentation follows, after which the wine is matured for around 30 months in barriques, adding structure, complexity and subtle oak notes, and then refined for a further 8 months in bottle before release.

Food & Serving
This is a superb partner for rich, flavourful dishes and slow-cooked meats. Serve it alongside braised beef such as boeuf bourguignon, hearty stews, roasted or grilled ribeye steak, game dishes, or aged hard cheeses like Parmigiano Reggiano. It also works beautifully with truffle risotto or dishes built around wild mushrooms. For optimal enjoyment, serve at 17–18°C. Given its youth and concentration in the 2018 vintage, decanting for 1–2 hours is strongly recommended, especially from Double Magnum, to allow the wine to open fully and reveal its layers of fruit, spice and dried nuances.

Producer
The Paolo Cottini estate is a relatively young label, founded in 2010 by husband-and-wife team Paolo and Sara, yet it draws on four generations of family experience in Valpolicella. Based in Castelrotto, a small medieval village in the San Pietro in Cariano commune, the winery sits in the heart of Valpolicella Classico, surrounded by historic vineyard sites and the remnants of an ancient castle that still stands as a symbol of the area’s noble past. Their vineyards, spread between the Negrar valley and Valgatara, are entirely pergola trained and hand-harvested, reflecting a commitment to traditional methods. In their DOC and DOCG wines, Paolo and Sara aim to honour classic regional styles and expressions, while their IGT bottlings serve as a more personal canvas for experimentation. In a relatively short time, the estate has gained recognition for offering expressive, characterful wines that deliver significant quality for the price, reinforcing Valpolicella’s reputation as one of Italy’s great red wine regions.
