Description
Palmento Costanzo Etna Rosso Mofete is a vibrant expression of Etna DOC, where native Sicilian grapes meet the unmistakable character of volcanic terroir. Built around 80% Nerello Mascalese and 20% Nerello Cappuccio, it combines freshness, fine structure, and a distinctly mineral edge in a style that speaks clearly of place and tradition.
Tasting Notes
In the glass, it shows a bright, light ruby-red colour that hints at its elegance and lift. The nose opens with clear red berry aromas, delicate spice, and subtle notes of volcanic ash, giving the wine an earthy, smoky signature that feels very Etna.
The palate is fresh and juicy, with sweet, polished tannins and a savoury, energetic finish. Its balance of fruit, minerality, and structure makes it immediately appealing, while also giving it enough depth to develop gracefully over the next few years.
Production
The grapes come from Etna DOC on Sicily’s volcanic slopes, where mineral-rich soils and altitude help preserve freshness and aromatic precision. Fermentation takes place in stainless steel with selected indigenous yeasts, followed by complete malolactic fermentation. The wine is then aged for 12 months, with half in stainless steel and half in large 50-hL oak casks, before spending a further 12 months in bottle.
Food & Serving
This Etna Rosso is a natural match for grilled meats, roast lamb, mushroom-based dishes, and Sicilian cuisine such as pasta with tomato, aubergine, or slow-cooked ragù. Serve at around 16–18°C to bring out its perfume and supple structure. Decanting for 20–30 minutes can help open the aromatics, especially when enjoyed young.
