Description
Palmento Costanzo’s Bianco di Sei 2023 is an organic Etna Bianco made from Carricante and Catarratto, offering a refined expression of Sicily’s high-altitude volcanic vineyards. Sourced from historic pre-phylloxera bush vines on Mount Etna, it combines bright freshness with striking minerality, saline length and remarkable aromatic complexity.
Tasting Notes
The wine appears clear and bright straw yellow. Its complex bouquet opens with white flowers and lively citrus, followed by notes of honey, ginger, aromatic herbs and a subtle petroleum character. On the palate, it is fresh yet enveloping, with a firm mineral profile and a distinctive saline edge that gives the finish impressive persistence.
Already expressive in its youth, Bianco di Sei has the freshness, structure and lees-derived texture to develop further complexity over the medium term. With bottle age, its citrus and floral aromas may evolve towards deeper honeyed, herbal and mineral nuances.
Production
The grapes come from Contrada Santo Spirito near Passopisciaro on Etna’s northern slopes, where vineyards are planted on historic lava terraces supported by dry-stone walls at approximately 650–780 metres above sea level. The nutrient-rich brown sandy soils were formed by the gradual weathering of volcanic lava deposits. Harvesting takes place by hand in late September, followed by gentle pressing and fermentation in stainless-steel tanks with naturally occurring yeasts. The wine rests on its fine lees for ten months before spending a further eight months in bottle, allowing its freshness, texture and saline character to harmonise.
Food & Serving
Serve lightly chilled at around 10–12°C. Its lively acidity, mineral character and textured palate make it an excellent partner for oysters, shellfish, grilled fish, seafood pasta and risotto, while its aromatic complexity also suits roast chicken, fresh goat’s cheese and vegetable dishes with herbs. Decanting is not essential, although a short period of aeration in the glass can help reveal its more nuanced aromas.
Producer
Palmento Costanzo farms organically in the Etna Park, cultivating historic vineyards on the mountain’s traditional lava terraces. The estate focuses on preserving old, pre-phylloxera bush vines, some more than a century old, while practising the demanding form of high-altitude viticulture found on Mount Etna. Its wines reflect the area’s volcanic soils, distinctive microclimate and long-standing winemaking traditions.
