Nicola Gatta Rosè de Noirs Nature is a characterful Italian sparkling rosé from the hills of Lombardy, crafted for those who love precision, minerality and gastronomic sparkle. This is a zero-dosage, no-added-sulphites wine that leans on long lees aging rather than sweetness to deliver depth and complexity. After around 60 months resting on the lees, it strikes a rare balance between chalky structure, refined bubbles and vivid fruit.
Tasting Notes
In the glass, Rosè de Noirs Nature shows a delicate, pale onion-skin to soft salmon hue, with an ultra-fine and persistent mousse that hints at its extended time on the lees. The nose is quietly intense: crushed red berries, wild strawberry and redcurrant are layered over notes of grapefruit zest, rose petals, wet stone and a subtle brioche-like autolytic character.
On the palate, the wine is dry and incisive, driven by a vivid, chalky minerality and taut acidity. The low-temperature maceration preserves fresh, precise red-fruit notes—think pomegranate, cranberry and blood orange—while the long aging brings texture, creaminess and length without weighing the wine down. The finish is saline, mouthwatering and very clean, with no dosage and no added sulfites keeping the expression pure and linear. Production
Grown in the limestone- and mineral-rich hills of Lombardy, this Rosè de Noirs is shaped by a cool, ventilated terroir that naturally preserves acidity and aromatics—ideal conditions for traditional-method sparkling wine. Grapes are hand-harvested to ensure only perfectly healthy bunches make it to the press, crucial in a cuvée with no added sulfites. A gentle, low-temperature maceration on the dark-skinned grapes (predominantly Pinot Noir) draws out a delicate color and fine phenolic structure without excess tannin. The base wines undergo a meticulous second fermentation in bottle, followed by around 60 months of aging on the lees, allowing complex autolytic notes to develop. The wine is disgorged without dosage and bottled without added sulfites, giving a bone-dry, unmasked expression of grape and place.

This is a food-friendly sparkling rosé that shines alongside refined yet flavorful dishes. Pair it with crudo or carpaccio of salmon or tuna, oysters and shellfish, sushi and sashimi, or delicate charcuterie like prosciutto and speck. It also works beautifully with roasted poultry, veal tartare, mushroom risotto or goat’s and soft-rind cheeses. Serve well-chilled at around 8–10°C (46–50°F) to emphasize its tension and minerality.
